Pecorino Re Nero aged for at least three months. The black crust reminds us the peasant’s custom to protect the cheese greasing it with olive-oil’s dregs and ashes to extend the conservation. The paste is white, friable, lightly rough. Very tasty, with a complete flavor.
Pecorino Re Nero is made in the region of Tuscany, this aged sheep’s milk cheese is a world apart from Pecorino Romano, which is more salty and less complex than Pecorino Nero. Pecorino Nero is made exclusively from the milk of black-fleeced ewes (pecora means “sheep” and nero means “black”), and unlike its Roman counterpart is good for a lot more than shaving on pasta. It is a great eating cheese: light in texture, nutty, sheepy, sharp in flavor, yet floral. It's like eating sauteed wild flowers that have been drizzled with warm sage butter. Naturally flaky, Pecorino Nero is also fantastic for shaving on to a variety of dishes, including desserts.
