The big brother Cantal has a diameter of 40 cm and weight of 40 kilos, followed by the 20 kilo Petit Cantal, and the 10 kilo light Cantalet. On each cheese there is the family coat of arms made of aluminum showing the membership to the clan of AOC cheeses, also showing the place of origin.
The home of the Cantal brothers is Auvergne, the Departement Cantal and 41 communes of adjacent counties. All of the Cantal brothers hide a soft, slightly sour, hazelnut core under their hard gray-gold coloured rind. This taste inspired the Romans 2000 years ago, as indicated on writings of Plinius, the older one.
